Chicken liver pigweed is a species of Amaranth, also known as Amaranthus gallus. No one knows exactly how and when this variety of pigweed originated. It is likely from deliberate genetic modifications. If true, the harvested chicken livers would be designated as Frankenfood by the FDA. With that designation, they could not be sold as organic.

Chicken liver pigweed first came to prominence in the US after an Alabama farmer found it growing on his property and turned it into a cash crop.
